A simple, quick and easy recipe for nut cheese is as follows: Heat your oil in a frying pan until it is hot and shimmery.
Add the onion, celery, garlic, mushrooms, garlic paste, thyme and salt.
Cook for 2 minutes.
Add a pinch of cayenne pepper and cook for another 2 minutes or until the mixture starts to brown.
Add another 1/2 teaspoon of salt and cook again.
Add two more tablespoons of oil and heat for another 1 minute or until it begins to bubble.
Remove from the heat.
Add your nuts, stir well and cook on a low heat for 5 minutes.
